Found some fantastic healthy recipes that use very good ingredients – for instance, one of these used coconut milk, coconut sugar, and coconut oil in it – in case you’re curious, it was “THAI RED CURRY WITH VEGETABLES“.
Jasmine brown rice is used (or you can substitute long-grain brown rice). It uses a whole host of healthy vegetables – chief among them ..
- Red Bell pepper
- Yellow or Green Bell pepper
- Onion
- Kale
- Carrot

“The secret to making amazing Thai curries is to use plenty of aromatics (like onion, ginger and garlic), full fat coconut milk for richness (you won’t regret it!)” – oh, and also a bit of rice vinegar and sugar [Raw sugar or Coconut sugar].

Thai red curry paste can be bought at the store, and it’s quite flavorful ♦♦ You can create your own, too.
Also, you can mix up the variety of fresh vegetables you use – for instance, maybe try Broccoli or Sweet potato (cut up).
Or perhaps you like cauliflower or mushrooms. There’s different kinds of SQUASH you can use too, to “spice things up” (cut in small pieces).
