As far as Sweet Potato and what it can do for your health, I’ll include a worthwhile video below, and then a wiki link so you can read about it yourself.  Michael Kory, body builder, practices sound health measures (he DOES use sweet potatoes, and he prepares them 2 ways) – he has used the trusty George Foreman Grilling method  (See video: bit.ly/george-foreman-grill )

His 2nd method – he PEELS it, pokes holes in it, and dries it with a paper towel.  Then he lays it on a plate & cooks it in the microwave (he does 6 minutes but it depends on the strength of yr microwave – alternately, you can do it in a regular oven (Some believe it conserves nutrients).

Next he lays it in a bowl and mashes it up; then he adds cinnamon flavoring and some sweetener – up to you.
